Bluefin Stunner
Our loins have a perfect color, flavor and texture. Through our technique of stress free capture, we avoid the appearance of "Yake" (burnt meat in Japanese), produced by the excitement of the tuna when its life is in danger.
All animals, when they feel in danger, they defend themselves and fight. Their muscle tenses and they secrete lactic acid. This produces an unpleasant taste, a tense texture and a brown color in the meat that gives it an unappetizing appearance.
At JC Mackintosh we are very committed to animal welfare, which is why all our bluefin tuna catches are stress free. Just like it is performed with cattle in slaughterhouses, we apply a small electric shock that stuns the tuna as soon as it bites the hook. Instead of bringing the tuna on board by force, our tuna goes up to the surface by buoyancy.
